And that’s exactly what I found. Founder Pablo Sartori, a man who knows a thing or two about bringing people together, has poured his heart into this place. After relocating to Los Angeles, Sartori took his time, immersing himself in the local scene before reopening Negroni with a warmer, brighter feel. The patio alone, with its inviting glow of Campari bottles and a cozy fireplace, sets the tone for an evening of spirited indulgence.

But let’s talk about the food and drinks, because that’s where the real magic happens. Negroni’s menu is a love letter to Buenos Aires, with a touch of California flair. I started the night with a classic—one of their many signature Negroni variations. The Sbagliato, a twist on the traditional negroni with a splash of prosecco instead of gin, was the perfect way to kick things off. The Bicicletta, with its blend of campari, sauvignon blanc, and a hint of orange, was as refreshing as it was intoxicating—a drink that demands to be savored, not rushed.

Then came the food. First up, the truffle carpaccio—thin slices of beef tenderloin topped with fresh black truffle, aioli, and parmigiano. It’s the kind of dish that melts in your mouth, leaving behind a symphony of flavors that linger long after the last bite. The cacio e pepe, a seemingly simple pasta dish, was anything but ordinary. The balance of pecorino cheese and black pepper was spot on, a perfect tribute to the Roman classic.

For the main course, I couldn’t resist the filet mignon “Au Poivre.” The meat was cooked medium-rare, the peppercorn crust adding just the right amount of bite. Paired with their truffle home fries, it was a meal that spoke to the soul—rich, indulgent and utterly satisfying.
