Though not an every-day menu item, Chef Kurt often loves highlighting foie gras as a seasonal special, or as one of the stars in his prix fixe Chef’s Whim Dinner. Kitchen 4140 also recently hosted a Welcome Back Foie Gras dinner with a collaboration of San Diego chefs to celebrate the delicacy. For restauranteur Bertrand Hug, foie gras is particularly special as he grew up on a farm in France that specialized in its production.
