Begin with tea-smoked trout with poached quail egg, squaw bread and bacon crumble, sea beans and caramelized chicory; or a “toast to asparagus” made with sautéed green asparagus, pickled white and purple asparagus, Easter egg radish, fried asparagus spears, chive and Meyer lemon buerre noisette. Entrees include Haven’s housemade meatloaf with English pea and crème fraiche, relish, roasted sunburst yellow squash and Haven ketchup; and grilled lamb T-bone accompanied by faro and mushroom risotto, parsley and mint gremolata and pomegranate and rosemary demi glace.
