It’s hardly news that it’s difficult to get reservations at Trois Mec, arguably the hottest new restaurant in town. After all, the celebrity chef triumvirate of Ludo Lefebvre (of LudoBites pop-up fame), Vinny Dotolo and Jon Shook (of Animal and Son of a Gun) are partnered in the enterprise, and a scant 24 seats fill the space, which hides in a defunct pizzeria. But Trois Mec (roughly translating to “three guys”) ups the ante—and weeds out no-shows—by requiring prospective diners to purchase tickets for Lefebvre’s frequently changing five-course feast. Past menu highlights have included a rib eye cap with shallot broth, black walnuts and clover spelt, and potato “pulp” with brown butter, bonito flakes, onion soubise and Salers cheese. 716 N.
