The wait is finally over. Beloved Portland doughnut shop, Blue Star Donuts has officially opened its first California outpost. Aside from their over-the-top gourmet doughnut offerings—think blueberry bourbon basil, hard apple cider fritter and the O.G. (Orxata Glaze)—confection-crazed fans line up because the purveyor uses high-end ingredients like European-style butter and cage-free eggs, and an 18-hour process to make its signature brioche-style dough.
What does 18-hours of doughnut conjuring entail? First, all those delicious ingredients like the European butter, sustainable bread flour, whole milk and free-range eggs are mixed into a complex dough, which ferments and rises over night. The next day, the doughnuts are fried in rice oil at a lower-than-usual temperature. This ensures that they absorb less oil, making them less greasy than normal doughnuts. Finally, the freshly fried pastries are coated and injected with artisanal glazes and fillings like fresh fruit, vanilla beans, French dark chocolate and powdered sugar. Sign us up!
