Tomorrow Brian Redzikowski, the executive chef at the Thompson Hotel in Beverly Hills plans to blow your mind during the “Claustro” May Hatchi Guest Chef Series at BREADBAR. the “Claustro” menu will feature eight small plate courses (six savory and two sweet items) priced at $8 per dish.

Items on Redzikowski’s “Claustro” Hatchi Menu will include:

Tuna with Watermelon, Tomato, Pistachio, and Soy

Unagi with Fuji Apple, Foie Gras, and Potato

Squash Blossom with Uni and Salsa Verde

Langoustine with Rancho Gordo “Espuma”

Halibut with Artichoke and Hoji Blanca

Wagyu Beef with Spring Garnish

Asahi Float with Acacia Honey

Caramel Popcorn with Preserved Cherries

Redzikowski’s passion for Asian cuisine was sparked early on by his travels to Southeast Asia. On his return to the United States, he secured a position at Nobu Matsuhisa in Aspen, Colorado, and later served as sous chef at Joel Robuchon at the Mansion, and executive sous chef of Yellowtail Sushi Restaurant at the Bellagio in Las Vegas. Redzikowski works closely with local farmers to source the best seasonal produce. He describes his cuisine as French inspired, while applying a modern technical approach to Asian ingredients.
