At Hotel Clark, Votana Gives Historic Downtown a New Dinner Address

Chef Gio Koletty’s California-Mediterranean restaurant brings seasonal cooking to a Hill Street landmark, with its grand opening celebration set for October 15. A hotel built in 1914 has a new invitation for Los Angeles: come over for dinner. Votana, the signature restaurant at Hotel Clark, places chef Gio Koletty’s California-Mediterranean cooking inside a historic Hill Street address as the property prepares for its’ grand opening celebration.

The kitchen’s announced approach centers on seasonal ingredients, coastal influences and dishes designed for sharing. It gives the restaurant a broad geographic vocabulary while keeping the practical proposition familiar: gather a few people and build a meal across the table.

The setting is part of the reason to pay attention. Hotel Clark brings the project into an established downtown building, making a meal there an opportunity to encounter a piece of the neighborhood through its current use. Guests have a reason to step inside and spend time, rather than simply register another historic facade while passing through.

Votana’s public booking page already offers breakfast, weekend brunch and dinner reservations. That distinction is useful: the Oct. 15 celebration marks the grand opening, while public dining is already being offered. The press invitation’s cocktail reception, ribbon cutting and pool-deck gathering belong to that hosted celebration; ordinary restaurant reservations follow their own schedule.

For diners seeking a more specific occasion, an October tasting experience is listed for October 15–30. Koletty’s four-course menu is advertised at $120++, with an optional $65++ whisky pairing. It adds a focused way to explore the restaurant during its opening month, particularly for guests interested in how food responds to a strongly peated whisky.

There are several ways to approach the new address, then: an everyday breakfast, a weekend brunch, or an evening centered on the tasting menu. The larger draw is a chance to see how this kitchen establishes itself within the life of a downtown hotel.

Book the public dining experience that suits the visit, and give Hill Street a little time before heading home. The building has been here for more than a century; this table is beginning its own chapter.
