
Jeremy Fox’s restaurant is scheduled to open at Fairmont Century Plaza on Oct. 26, with plans reaching from morning coffee to weekend brunch. The name is a family introduction: Birdie, chef Jeremy Fox’s daughter, and Gladys, his grandmother. As Birdie G’s prepares to open at Fairmont Century Plaza on Oct. 26, that connection provides a useful starting point for understanding a restaurant moving into a very different setting.
The new Century City location will carry forward its approach to American comfort cooking, shaped by family traditions and regional flavors. Fox’s project has always made memory part of its identity; the hotel opening places that idea within the daily rhythm of a property on Avenue of the Stars.
The announced service schedule is particularly telling. Coffee is planned from 6 a.m., followed by breakfast and lunch from 6:30 a.m. to 2:30 p.m. Dinner is scheduled for 5:30 to 9 p.m., with Saturday and Sunday brunch from 10 a.m. to 2 p.m., according to the opening announcement.
Those hours give the restaurant several possible roles. A hotel guest might encounter it over breakfast, someone working nearby over lunch, and returning Birdie G’s diners over an evening reservation. The opportunity is to make a recognizable restaurant identity work across those different occasions.
The space is being developed with EDG Design, while the restaurant’s booking page describes the new iteration as a California brasserie. The emphasis remains on familiar dishes approached with seasonal ingredients and a measure of playfulness. A detailed opening menu is still to come, leaving the first visit to reveal how that approach translates to individual plates.
For now, the strongest reason to follow the opening is the combination of a known chef, a personal culinary point of view and an expanded daylong format. It offers a way to revisit Birdie G’s through a different neighborhood and a different kind of meal.
Reservations are already being accepted for the planned opening. Diners can choose their own introduction—breakfast, lunch, dinner or weekend brunch—and see how a restaurant named for two generations of one family settles into its next home.
