Stagecoach 2026 Food Lineup Brings Smoke, Heat, and Festival Staples to the Desert

By the time the gates open in Indio, the smell hits first—smoke drifting across the grounds, grills firing early, lines forming before the first set even starts. At Stagecoach 2026, happening April 24–26, the food is built to match the scale of the music: bold, fast, and rooted in the kind of flavors that hold up under desert heat.

Goldenvoice’s culinary program leans fully into that identity this year, assembling a lineup that stretches from slow-smoked barbecue to late-night festival staples. It’s a system designed for movement—quick bites between sets, sit-down moments in VIP, and indulgent plates that carry through long nights in the desert.

Smokehouse Culture Takes Center Stage

At the heart of the grounds, Guy Fieri’s Stagecoach Smokehouse anchors the experience with live-fire cooking and pitmaster collaborations. Names like Pat Martin, Chris Conger, Aaron May, and Rashad Jones bring regional barbecue styles into the spotlight, from whole-hog Tennessee traditions to competition brisket and Southern smokehouse techniques. 

It’s part demonstration, part performance—where smoke, technique, and storytelling come together in real time, reinforcing barbecue as both craft and culture within the festival.

Terrace Food Court: Fast, Flavor-Driven Staples

The Terrace food court operates as the main artery of the festival—built for quick access and bold flavors. Roy Choi’s Kogi delivers Korean BBQ tacos and loaded fries, while Farmhouse Kitchen Thai Cuisine brings vibrant Thai comfort dishes that cut through the heat.

Irv’s Burgers returns with its smashed-to-order patties, joined by Fat Sal’s oversized sandwiches stacked with chicken fingers, fries, and sauces. Around them, concepts like Daddy’s Dogs and Ritchies Hot Chicken keep the pace moving with crowd-ready comfort food. 

Citrus Courtyard: West Coast Street Food Energy

At Citrus Courtyard, the lineup leans into street food culture and late-day cravings. Tacos 1986 grills tortillas to order, Shake Ramen serves steaming bowls alongside garlic noodles, and Dave’s Hot Chicken brings a level of heat that holds up against the desert air.

Sweet options balance it out—Afters Ice Cream returns with its Milky Bun sandwiches, while Happy Ice offers fruit-forward Italian ice designed to cool things down between sets. 

12 Peaks VIP: Elevated Dining in the Desert

For those stepping into 12 Peaks VIP, the food shifts toward chef-driven concepts paired with shaded lounges and premium views. Le Burger by Camphor delivers a refined burger experience, alongside pommes frites and caviar-topped nuggets.

Chef Eric Greenspan’s New School Quality Grilled Cheese builds on its cult following with stacked sandwiches layered with brisket, pastrami, and applewood-smoked bacon—rich, direct, and designed for indulgence. 

Comfort Food, Late Nights, and Festival Indulgence

Across the grounds, the deeper corners of the lineup lean into excess. Bacon Mania delivers loaded mac and cheese and barbecue plates, while Prince St. Pizza brings its signature square slices into the mix.

In the Palomino area, Charles Pan-Fried Chicken anchors the lineup with its Harlem-rooted recipe, while Butterypat introduces wagyu chopped cheese and cheesesteaks finished with white truffle butter. Nearby, Birrieria Michi serves slow-braised birria across tacos, fries, and ramen—built for late-night momentum.

What defines Stagecoach isn’t just the lineup—it’s the scale of everything around it. The food program reflects that same approach, blending regional traditions, street food culture, and chef-driven concepts into a single, continuous experience.
