Polite Provisions and Soda & Swine Now Open
Consortium Holdings launches its latest hot spot, a dual restaurant and cocktail concept, in Normal Heights.
The duo behind some of San Diego’s trendiest dining and drinking spots has opened its latest endeavor with an all-star hospitality team that includes internationally celebrated bartender Erick Castro and two-star Michelin Chef Jason McLeod. With an expansive menu of cocktails curated in reverence to the ingredients’ medicinal uses, Polite Provisions is reminiscent of the golden era of the drugstore—an homage to Main Street America where people would gather to chat and share ideas at the soda fountain. The 2,200-square-foot space houses one of the most ornate bar setups in existence–a 46-custom tap system featuring far more than just the 18 available craft beers. At Polite Provisions, the taps pour everything from carbonated cocktails to cold coffee to straight spirits. Hungry after all this tap talk? Sister and neighbor restaurant Soda & Swine serves its food right to the tables at Polite Provisions. With a straightforward menu of based on comfort food staples—meatballs and apple pie—by Consortium’s corporate chef, Jason McLeod, Soda & Swine is also a nod to classic Americana. The meat, ground in an old-fashioned butcher shop setting, is available in various flavors including vegan alternatives in basic or “smashed” meatball form. Choose from a variety of savory sauces, then add a finishing touch of cheese and top off the meal with a hearty side. Small plates and salads are served à la carte.
