O.C. Dining: New Restaurant CdM Set to Open in March 2019

Hollywood producer McG and restaurateur Jordan Otterbein—River Jetty Restaurant Group partners known for acclaimed A Restaurant and A Market in Newport Beach—are set to unveil CdM, a new American-inspired culinary concept, in March.

Corporate executive chef Jonathon Blackford of River Jelly Restaurant Group (previously the executive chef at A Restaurant) has developed CdM’s seasonal menu. The kitchen will boast a dry-curing cabinet for housemade charcuterie, a pizza oven and an extruder for fresh, distinctively shaped pasta.

Once it opens, expect seasonal menus featuring the highest quality of unique, hand selected ingredients. More “creative American” and less steak-centric than A Restaurant, it will draw influences from America’s melting pot of cuisine.

As for the decor, CdM will embrace irregularity with a nod to the restaurant’s coastal location. Looking from top to bottom, the light fixtures are to be made with materials from salvage shipyards, while the flooring will feature tile and wood from a 19th-century Chicago warehouse. Plenty of natural light will fill the space to create a welcoming atmosphere; comfortable booths and tables surround the central bar (see photo above). An interesting addition to the restaurant is a speakeasy-themed bar, located downstairs, that will offer an exclusive selection of cocktails and spirits as well as a vintage photo booth.
