Chef/proprietor Alessandro Pirozzi recently announced the addition of his Culinary Collection Classes to his repertoire at Italian restaurant Mare Culinary Lounge in Laguna Beach with two collections planned. Each collection includes four classes—appetizers, pasta, main course and dessert—to highlight each course in a meal. Each item demonstrated will be paired with a wine for tasting. In the appetizer class, three hors d’oeuvres will be made and served with three special wines. During the pasta class, students will not only learn the techniques for making the perfect pasta dough, they will also discover which sauces to serve with the different varieties. As for the entrée course, students will prepare either a fish or meat dish with delicious sides all paired with chef Pirozzi’s selection of wines. Finally, chef instructs how to successfully combine sweet and savory flavors to make an extraordinary dessert. Classes are $75 each; purchase an entire collection of all four classes for a $25 saving. Collection I dates are Oct. 1, 15, 29 and Nov. 12.
