At Seasons 52, the arrival of spring means only one thing: a brand new menu full of spring’s freshest flavors. As the season unfolds, delicious artichokes, tomatoes and Haas avocados debut, each with a special place in the new line-up of farmer’s market inspired dishes. For starters, sample the unique artichoke-stuffed artichoke leaves served over a bed of organic arugula dressed with Parmesan cheese and balsamic glaze. The tomato and Haas avocado salad, also served with organic arugula and balsamic glaze along with a side of grilled bruschetta, shows off the rich creaminess of the prized Haas fruit, which originated in nearby La Habra Heights. For entrees the Columbia River steelhead trout summarizes spring in one simple, yet delicious, dish. Grilled to perfection and topped with a lemongrass sauce, the trout is balanced with subtly savory basmati rice and a colorful ménage of spring vegetables. Also available on the new menu: spicy snow peas and shitake mushrooms with roasted almonds, red wine-glazed lamb T-bone with asparagus and truffle mashed potatoes and tiger shrimp pasta with spring asparagus and oyster mushrooms in a light lemon-basil sauce.
