Inside Drago Centro’s Wild Game Tasting Menu

Fall brings hunting season in many parts of the country and we can reap the bounty from chef Celestino Drago and chef di cucina Ian Gresik at Drago Centro restaurant in downtown Los Angeles.

At Drago Centro downtown, dine on a fall five-course tasting menu ($70) that throws a nod to chef Celestino Drago’s legendary hunting trips. Highlights include venison and guanciale carpaccio, rabbit fettuccine, truffle-crusted partridge and squab roulade and goat’s milk panna cotta with concord grampe and salted crumble for dessert. Optional wine pairings are also available for $45. Take a look:

La Pasta: rabbit fettuccine, shaved fennel, carrots, baked ricotta.
partridge
