Los Angeles Chefs Battle for Foie Gras, You Win

marche foie grasAs the July 1, California moratorium on foie gras looms, chefs from Northern and Southern California team up to offer a foie gras “battle” at four top Los Angeles restaurants on May 14.

As the California law stands now, come July 1, the luscious unctuous delicacy of foie gras will be an indulgence of the past—at least in this state. In light of that, the Coalition for Humane and Ethical Farming Standards, along with Los Angeles restaurants: Mélisse, The Royce at The Langham, Lemon Moon and Animal, are simultaneously hosting a six-course prix fixe dinner to support sustainable farming practices and “the whole duck.” The battle for foie gras features top chefs from Northern and Southern California working together at each of the participating restaurants:

Dine on special preparations of foie gras such as foie gras tortellini with game jus and forest mushrooms and fennel; foie gras Sauté with grilled and Partially Dehydrated Strawberries; and Santa Barbara Spot Prawn with Cured and Poached Foie Gras, Fava Beans and Nasturtium. All of the proceeds from the dinner will benefit The Coalition for Humane and Ethical Farming Standards (C.H.E.F.S.).
